Ingredients:
3 cups fresh basil
1 lemon
1/3 cup pine nuts (If you don’t have pine, I’ve used both almonds and cashews before and it still turns out great)
3 garlic cloves, chopped
½ TSP Himalayan pink salt
¼ cup extra virgin olive oil
Combine all ingredients in food processor except olive oil.
Pulse until chopped, slowly add olive oil through the top. Combine. (Make sure not to pulse too much where it becomes smooth)
Serve with pasta, on a sandwich, with vegetables, anything!
Personal favorite:
Raw zucchini noodles with pesto and halved cherry tomatoes. Throw in some extra nuts for a crunch.
